Chapter 7: An Interesting topic of restaurant operations:Suggestive selling


Suggestive selling is implemented by sales staff to boost more revenue to a sale that has already taken place, by suggesting some better and useful products or services to the customer. In restaurant operations, servers would introduce du jour menus or other special cuisine or beverage to customers and invite them to select.

It seems that suggestive selling is a kind of easy stuff. But it would easily become over-aggressive. Here are some tips for a success suggestive selling.

1. Understand the customer's needs.

Do not directly suggest anything that first comes to your mind, as this would create a negative impact on the customer's mind. We should try to suggest something relevant.

2. Avoid using words describing negativity such as don't, not, cannot.

Find some positive words to substitute which would not change the meaning but could serve the purpose of expressing thoughts.

3. Keep in mind that you have to always be price-sensitive.

Treat each sale differently according to customers’ own situation as their purchasing power and wants varies.

4. Remember not to interrupt the customer while he is buying something that he already wants.
 
Suggest what you want when the customer finishes buying things. Such an interruption might create an element of doubt in the customer’s mind, that the staff is suggesting things only to increase the sales and they have no concern for the customers’ needs.

By performing suggestive selling, customer satisfaction can be added. When the staff suggested some good product or service, and if the customer finds it is useful and worthy, he/she will be willing to pay for it. Even if the customer does find it useful but not affordable, he/she will still appreciate the personal attention towards him/her. Therefore, customer satisfaction is achieved in both the sale and non-sale events. In result, suggestive selling can help to increase customer retention.

10 tips and suggestions for being a Bar Manager

1.          Upgrade your tech skills. Security cameras, TAB systems, staff monitoring and entertainment all use complex equipment. This can be intimidating for 'old hands', but why not swap some of your people-skills for a tech update from someone younger?

2.          Learn how a business works. Not just case and keg prices, but how all the overheads fit into the total profit picture. Your work is a central part of the profit and loss statement. If you're given a budget, make sure it's explained to you, and ask for all figures to be available weekly.

3.          Keep up with the latest product trends. Bar and nightclub blogs and websites, discussion forums and webinars are a brilliant source of information. Yes, there's sure to be some 'on the job' learning needed - late nights are part of the job description.

4.          Learn about modern bar marketing. The real skill is designing a beer, wine and cocktail list that not only looks good, but also maximises profitability through design and pricing. Keep a portfolio of your own lists and menus, analysing why they're successful.

5.          Grow your experience with craft beers, wine lists and modern spirits. There's no shortage of help from suppliers, but where they zig you zag; not just following the latest big promotion but gaining a reputation for originality and fresh ideas.

6.          Develop your people skills. When you're in charge of a team, leadership ability can make the difference between over-stressed or under-control. Develop your experience with modern recruitment, rostering, teamwork, personality types, conflict management, delegation and efficient meetings. These can feel intimidating when you're new, but there are many young bar managers in charge of a team before they're 25. Watch how the most effective leaders operate and ask for their 'secrets'.

7.          Be clever at training staff. Most bar staff don't know enough about flavours, product origins and products beyond their own drinking habits. The more you teach them, the more they'll look after you. Their tips increase, the boss is happy because sales are up, and your pay rise is easy to justify.

8.          Be smart with drug and alcohol problems. You help people get drunk, but you're also meant to stop them having problems. Your staff love a drink or three, and 'recreational drugs' are often a part of the scenery. But the legal penalties are severe, and you may be the licensee who takes the rap.

9.          Gain respect from senior management. You're paid to manage people, supplies, equipment and financial results. How well you present the results makes a big difference to the respect you gain.

10.      Go green where possible. There's a lot to be gained from implementing energy and water saving measures to reduce costs eg: refrigeration costs, glass washing, use of chemicals, use of ventilation and so on - and not just for the good of the environment. A practical 'green' approach makes a big difference to the bottom line.

Another club is DECA, whose purpose is to prepare emerging leaders and entrepreneurs in marketing, finance, hospitality, and management. Members compete against other schools in case competitions that are held yearly.

Chpater 10: An example of recreation in Hong Kong: Hong Kong Wetland Park

Hong Kong Wetland Park

Hong Kong Wetland Park, classified as government-sponsored recreation, was found in New Territories in 1998. There are two main aims of the park, ranging from educating and raising citizens’ awareness of environmental protection, to attracting local and foreign tourists to promote the green of Hong Kong. Since everyone is welcomed to have a visit there, the park becomes their own garden for escaping from their busy life.




The following will discuss the daily operation, revenue and future plan of the park,

Daily Operation:
With “Hong Kong Wetland Park Special Area Order” coming to effect, the park has become the latest special areas of Hong Kong that is used to develop ecological mitigation for wildlife. The park is opened in the whole week, except the Tuesday if it is not a public holiday. In the weekend, there are even some volunteers who introduce the park to the visitors. Regarding the servicescape, there are five exhibition galleries, including ‘What are Wetlands?’, ‘Living Wetlands’, ‘Human Culture’, Viewing Gallery’ and ‘Wetland Challenge’. By introducing and educating visitors about wetland ecology in different gallery, it aims to emphasize the importance of wetland ecology to human being, which in turn encourages them to contribute more to the environment.

Revenue:
Different clients will be charged at different prices. Generally, adults are charged at HKD30, toddlers, students and the elderly are charged at HKD15. There is even a discount offered to the group which member are more than 10 persons, or people who buy the annual ticket. Since the revenue of park mostly comes from entrance fee, which is not enough to cover the expense, the government provides sponsor to maintain its daily operation. The park also outsources inner food service to Cafe de Coral so as to reduce the cost of running a food service.

Future development:
As an international tourist attraction of Hong Kong, Wetland Park will continuously focus on adding local features into education and recreation. For example, through some exhibitions and events cooperated with other organizations, visitors can have a great experience with the wildlife. Then, the public awareness of wildlife conservation will be raised. What’s more, the park will also keep integrating in protecting and offering a better living environment to those wild animals which are rare in Hong Kong. By doing so, it can build up a good word of mouth in the society as well as develop more attractive points to every visitors.

Another popular trend with consumers is being environmentally friendly. Many hotels are now "going green" and supporting sustainability to appeal to the eco-conscious consumer. They are doing this by making environment improvements to its structure to minimize its impact on the environment and following the practices of green living in order to be certified "green" by an independent third-party.

The Park Hyderabad in Hyderabad, India is just one of many examples of hotels promoting eco-friendliness. The Hyderabad has a stunning exterior that maximizes natural sunlight to reduce electricity consumption. In addition to that, there is a culture of green transportation, as the hotel promotes bicycling and electric cars.



Another example of this is the Six Senses Hotel in Con Dao, Vietnam.


Building materials from sustainable resources were used, and combined with a design of the building that maximizes air flow, the hotel is conserving energy by reducing the need of turning on the air conditioning. Staff is also very involved in social responsibility by committing to reduce carbon footprint.
